CASK: The quality of what was previously held in the cask will greatly contribute to form the character of Dalmore whisky
The rare casks, which have previously held 30-year-old Matusalem oloroso sherry, are exclusive to The Dalmore. These casks enrich the signature chocolate and orange character of Dalmore whisky with rich and nutty flavors.
12, 15, 18 years old Dalmore – American ex-bourbon cask used ( soft vanilla and honey notes ) – finished in a sherry cask ( these contribute with the rich nutty character )
12 years old- With its intricate aromas and flavors The Dalmore 12 is recognized as a whisky with character far beyond its age
15 years old – is smooth, rich, and well rounded, the epitome of The Dalmore house style. The whisky is then finished in different styles of oloroso sherry casks
18 years old – An evolution of The Dalmore house style, this 18-year-old expression shows bolder notes, is robust and intense whisky. The final maturation is in casks which have held 30-year-old Matusalem oloroso sherry, exclusively provided by the renowned Gonzalez Byass sherry bodega -> rich, deep chocolate character
Dalmore Cigar Single Malt – The body, structure, and character of this extraordinary expression is the perfect complement to a fine cigar – matured in American white oak ex-bourbon cask and finished in Sherry and Cabernet Sauvignon cask.
Dalmore King Alexander III – a one of a kind whisky with a rich and enticing flavor profile – matured in American white oak ex-bourbon cask for a period of time, after being divided into equal portions maturation is finished in six different casks ( small batch ex-bourbon casks, Matusalem oloroso sherry cask, Madeira barrels, Marsala casks, port pipes, and cabernet sauvignon wine bariques )
STORY OF ROYAL STAG SYMBOL / WHY IS WHISKY ABOVE CALLED KING ALEXANDER III
The Royal stag encapsulates the distillery’s royal heritage dating back to the 13th century. Colin of Kintail, Chief of the Clan Mackenzie, saved King Alexander III from the fury of a charging stag. In recognition of this noble act, the King granted the Mackenzie Clan the right to use the Royal stag emblem on their coat of arms. When descendants of the Clan became owners of The Dalmore distillery in the 19th century, the Royal Stag became the icon of each bottle
